  • 2 medium sweet potatoes, peeled and cut into small cubes Medium size for easier cubing.
  • 1 medium onion, any kind Chopped.
  • 1 medium bell pepper, red or green Choose red for sweetness.
  • 2 cloves garlic, minced Fresh is best, but powder works in a pinch.
  • 2 tablespoons olive oil or avocado oil For cooking.
  • 1 teaspoon smoked paprika Adjust to taste.
  • 1/4 teaspoon chili flakes Optional for heat.
  • 4 large eggs For topping, fried or scrambled.
Optional Extras
  • 1 cup spinach, chopped For added nutrition.
  • 1 cup mushrooms, sliced Optional for additional flavor.
  • 1 cup black beans, drained and rinsed Can be added for protein.
  • 1 cup shredded cheese For a cheesy finish, optional.

Method
 

Preparation
  1. Dice sweet potatoes into small cubes and chop onion and bell pepper. Have all seasonings ready.
Cooking
  1. Heat a large skillet over medium heat and add oil.
  2. Add sweet potatoes with a pinch of salt and pepper. Stir and let them sit to brown for a few minutes.
  3. Add a splash of water and cover for 2-3 minutes to steam sweet potatoes if needed.
  4. Once sweet potatoes are tender, add onion and bell pepper. Cook until they are soft and fragrant.
  5. Add garlic towards the end of cooking to avoid burning.
  6. Season with smoked paprika and chili flakes, then taste for salt.
  7. Push hash to the edges and crack eggs in the middle, or cook eggs separately as preferred.
  8. Serve with toppings like green onion, cilantro, hot sauce, or avocado.

Notes

For meal prep, cube vegetables ahead of time or cook the hash base without eggs. Best reheated in a skillet to maintain crispiness.
