Ingredients
  

Main Ingredients
  • 2-2.5 pounds boneless skinless chicken breasts or thighs Thighs add extra tenderness.
  • 1 cup Sweet Baby Ray’s BBQ sauce For the sauce base.
  • 1 medium onion, sliced Add under the chicken for flavor.
Optional Additions
  • 1 teaspoon chipotle powder For a smoky, spicy sauce.
  • 1 tablespoon melted butter Whisk into the sauce for garlic butter flavor.
  • 2 cloves garlic, minced Add to the melted butter for flavor.
  • 1/2 cup crushed pineapple For a tropical twist.
  • 1 tablespoon soy sauce Enhances the pineapple flavor.

Method
 

Preparation
  1. Place sliced onions at the bottom of the slow cooker.
  2. Add 2 to 2.5 pounds of chicken on top of the onions.
  3. Pour in one cup of Sweet Baby Ray’s BBQ sauce.
  4. Add a splash of water if necessary, to prevent burning.
Cooking
  1. Cook on low for 4 to 5 hours or on high for 2.5 to 3.5 hours.
  2. Check early if cooking on high to avoid drying out the chicken.
  3. Once cooked, shred the chicken in the pot and let it sit for 10 minutes to absorb the sauce.
  4. Taste and adjust with lemon, salt, or hot sauce as needed.

Notes

Serve with toasted buns, roasted potatoes, or rice. It pairs well with coleslaw or green beans. Leftovers can be stored in an airtight container for up to 4 days in the fridge.
