Preparation
- Place sliced onions at the bottom of the slow cooker.
- Add 2 to 2.5 pounds of chicken on top of the onions.
- Pour in one cup of Sweet Baby Ray’s BBQ sauce.
- Add a splash of water if necessary, to prevent burning.
Cooking
- Cook on low for 4 to 5 hours or on high for 2.5 to 3.5 hours.
- Check early if cooking on high to avoid drying out the chicken.
- Once cooked, shred the chicken in the pot and let it sit for 10 minutes to absorb the sauce.
- Taste and adjust with lemon, salt, or hot sauce as needed.
Notes
Serve with toasted buns, roasted potatoes, or rice. It pairs well with coleslaw or green beans. Leftovers can be stored in an airtight container for up to 4 days in the fridge.
