  • 8 oz short pasta (penne, rigatoni, or fusilli) Choose a shape that holds sauce well.
  • 12 oz cremini or baby bella mushrooms Can substitute with white mushrooms.
  • 1 medium onion or shallot For sweetness and depth.
  • 3 cloves garlic Minced or chopped.
  • 4 cups vegetable or chicken broth Use low-sodium if preferred.
  • 1/4 cup cream or milk Optional, adds creaminess.
  • 1/2 cup Parmesan cheese Grated.
  • 2 tbsp olive oil For sautéing.
  • 1 tbsp butter For flavor.
  • to taste salt and pepper Adjust based on preference.
  • 1 cup spinach or parsley Optional, for freshness.

Method
 

Cooking the Pasta
  1. In a wide pot or deep skillet, heat olive oil and butter over medium heat.
  2. Add sliced mushrooms and onion/shallot, spreading them in an even layer. Allow to brown without stirring for about 5 minutes.
  3. Stir occasionally and continue cooking until mushrooms are golden brown, approximately 5-7 minutes.
  4. Add minced garlic and sauté for another 30 seconds until aromatic.
  5. Pour in the broth and bring to a gentle simmer.
  6. Add the pasta and a pinch of salt, ensuring the pasta is just barely covered by liquid.
  7. Cover and cook, stirring a couple of times, until the pasta is just tender, about 10-12 minutes.
  8. Once cooked, turn off heat and stir in Parmesan and optional cream, along with spinach or parsley.
  9. Allow to rest for 2 minutes before serving hot with extra cheese and pepper.

Notes

For variations, consider adding protein like chicken or bacon, or additional greens such as kale or peas. Adjust seasoning and texture using pasta water and fats as necessary.
