Ingredients
  

Salad Ingredients
  • 8 oz Baby spinach Well washed and dried
  • 1 pt Strawberries Ripe and sliced just before serving
  • 1/4 small Red onion Thinly sliced; soak in cold water if too strong
  • 1/4 cup Sliced almonds Can substitute with candied pecans or walnuts
  • 1/3 cup Feta cheese Crumbled; can substitute with goat cheese or mozzarella
Poppy Seed Dressing
  • 1/4 cup Olive oil
  • 2 tbsp Apple cider vinegar or red wine vinegar
  • 1 tbsp Honey Can substitute with sugar
  • 1 tsp Dijon mustard
  • 1 tbsp Poppy seeds
  • to taste Salt and pepper
  • optional Splash of lemon juice If strawberries are very sweet

Method
 

Preparation
  1. Wash and dry the spinach well using a salad spinner or paper towels.
  2. Slice the strawberries right before serving.
  3. Whisk or shake the poppy seed dressing until creamy and blended.
  4. In a large bowl, toss the spinach with a small amount of dressing first.
  5. Add the sliced strawberries and toppings, then taste and adjust dressing as desired.

Notes

For potlucks, keep ingredients separate and toss just before serving. This salad is versatile and can be made heartier with protein like grilled chicken or shrimp.
