Preparation
- Wash and hull your strawberries. Blend them into a smooth puree.
- Taste the puree and sweeten it by adding sugar or honey, then add a squeeze of lemon juice.
- Whip the cold heavy cream in a bowl until soft peaks form.
- Fold the strawberry puree gently into the whipped cream in two or three additions.
- Spoon or pipe the mixture into cups and chill for at least 2 to 3 hours, overnight is ideal.
Notes
Best made a day ahead. For firmer mousse, bloom gelatin in cold water, then mix into the puree before folding into cream. Chill time is essential for the right texture.
