Ingredients
  

For the Mousse
  • 1 cup Fresh strawberries, ripe and sweet Plus extra for topping
  • 2 tablespoons Granulated sugar or honey Use a little at a time to sweeten
  • 1 tablespoon Lemon juice Just a squeeze to brighten flavor
  • 1 cup Cold heavy whipping cream Must be cold for proper whipping
  • 1 teaspoon Vanilla extract Optional, adds cozy flavor
  • 1 teaspoon Plain gelatin or agar agar Optional, for firmer mousse

Method
 

Preparation
  1. Wash and hull your strawberries. Blend them into a smooth puree.
  2. Taste the puree and sweeten it by adding sugar or honey, then add a squeeze of lemon juice.
  3. Whip the cold heavy cream in a bowl until soft peaks form.
  4. Fold the strawberry puree gently into the whipped cream in two or three additions.
  5. Spoon or pipe the mixture into cups and chill for at least 2 to 3 hours, overnight is ideal.

Notes

Best made a day ahead. For firmer mousse, bloom gelatin in cold water, then mix into the puree before folding into cream. Chill time is essential for the right texture.
