Preparation
- Preheat the oven to 350°F (175°C) and line a 9x13 inch baking pan with parchment paper, leaving an overhang.
- In a bowl, mix flour, powdered sugar, and salt for the crust.
- Cut in the cold butter until the mixture resembles damp crumbs and then press it firmly into the pan.
- Bake the crust for 18 to 22 minutes, until the edges are just lightly golden.
Filling Preparation
- While the crust is baking, whisk together sugar and flour in a bowl to avoid lumps.
- Add the eggs and whisk until smooth, then mix in the lemon juice, zest, strawberry puree, and salt.
- Pour the filling onto the hot crust and bake for 20 to 25 minutes, until the center is set but still has a tiny jiggle.
Cooling
- Allow the bars to cool at room temperature for about 45 minutes, then chill in the fridge for at least 2 hours before slicing.
Serving
- Lift the bars out of the pan using the parchment overhang and dust with powdered sugar before serving.
- Optionally, add a few tiny strawberry slices on top before serving.
Notes
If strawberries are super tart, consider adding a bit more sugar to the filling. Ensure the filling is fully set before removing from the fridge for best slicing results.
