Ingredients
  

For the Crust
  • 2 cups all purpose flour
  • 1/2 cup powdered sugar
  • 1 cup unsalted butter, cold and cut into cubes
  • 1/4 teaspoon salt
For the Strawberry Lemonade Filling
  • 1 1/2 cups granulated sugar
  • 1/3 cup all purpose flour
  • 4 large eggs
  • 2/3 cup fresh lemon juice (about 4 to 5 lemons)
  • 1 tablespoon lemon zest
  • 3/4 cup strawberry puree (fresh or thawed frozen strawberries)
  • Pinch salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a 9x13 inch baking pan with parchment paper, leaving an overhang.
  2. In a bowl, mix flour, powdered sugar, and salt for the crust.
  3. Cut in the cold butter until the mixture resembles damp crumbs and then press it firmly into the pan.
  4. Bake the crust for 18 to 22 minutes, until the edges are just lightly golden.
Filling Preparation
  1. While the crust is baking, whisk together sugar and flour in a bowl to avoid lumps.
  2. Add the eggs and whisk until smooth, then mix in the lemon juice, zest, strawberry puree, and salt.
  3. Pour the filling onto the hot crust and bake for 20 to 25 minutes, until the center is set but still has a tiny jiggle.
Cooling
  1. Allow the bars to cool at room temperature for about 45 minutes, then chill in the fridge for at least 2 hours before slicing.
Serving
  1. Lift the bars out of the pan using the parchment overhang and dust with powdered sugar before serving.
  2. Optionally, add a few tiny strawberry slices on top before serving.

Notes

If strawberries are super tart, consider adding a bit more sugar to the filling. Ensure the filling is fully set before removing from the fridge for best slicing results.
