For the filling
  • 8 oz Cream cheese, softened Full fat or reduced fat cream cheese can be used.
  • 1 cup Strawberries, chopped Fresh or thawed frozen strawberries. If using frozen, thaw and drain them.
For the toast
  • 8 slices Thick bread (brioche, challah, or Texas toast) Slightly stale bread works best.
  • 4 Eggs Large eggs.
  • 1 cup Milk or half and half Use non-dairy options for a dairy-free version.
  • 1 tsp Vanilla extract
  • 1/2 tsp Ground cinnamon
  • 2 tbsp Butter For cooking in the pan.

Method
 

Preparation
  1. In a mixing bowl, combine softened cream cheese and chopped strawberries until well blended.
  2. Spread a generous amount of the filling between two slices of bread to form a sandwich.
Cooking
  1. In a separate bowl, whisk together eggs, milk or half and half, vanilla extract, and ground cinnamon.
  2. Dunk each sandwich in the egg mixture, ensuring both sides are well coated.
  3. Heat butter in a non-stick pan over medium heat.
  4. Cook each sandwich until golden brown on both sides, about 3-4 minutes per side.
Serving
  1. Serve warm, topped with powdered sugar, fresh strawberry slices, and syrup as desired.

Notes

Keep the heat at medium to ensure the inside cooks through without burning the outside. Any leftovers can be reheated in a toaster oven for best texture.
