  • 8 oz cream cheese, softened Full fat tastes best, but use what you like.
  • 1/2 cup strawberries, chopped small Fresh is great, thawed frozen also works.
  • 2 to 3 tablespoons powdered sugar Adjust to taste.
  • 1/2 teaspoon vanilla extract Optional, but adds a cozy bakery vibe.
  • 1 pinch salt Wakes up the flavor.
  • 1 teaspoon lemon juice Optional; nice if your berries are not super sweet.

Preparation
  1. Set your cream cheese out for 20 to 30 minutes to soften. If you forget, you can microwave it for 10 seconds, but do not melt it.
  2. Chop the strawberries really small. If they are super juicy, blot them gently with a paper towel to avoid a runny spread.
  3. In a bowl, mix the cream cheese with powdered sugar, vanilla, and salt until smooth.
  4. Fold in the strawberries. Taste it. If it needs more sweetness, add a little more powdered sugar. If it tastes flat, add a tiny squeeze of lemon.
  5. Chill for 20 minutes if you can for the best flavor and texture.

Notes

This spread can be made ahead of time and is great for breakfast, snacks, or parties.
