Mixing and Baking the Cake
- Preheat your oven to 350°F. Grease and flour a 9 by 13 pan, or two 8 or 9 inch round pans.
- In a big bowl, add the white cake mix and the strawberry gelatin. Stir until evenly mixed.
- Add eggs, oil, thawed strawberries with juice, and water. Mix until smooth, about 2 minutes.
- Pour batter into the pan and bake. For a 9 by 13 pan, start checking around 30 minutes; for round pans, check around 25 minutes. It's done when a toothpick comes out clean.
- Cool completely before frosting to avoid melting the frosting.
Frosting the Cake
- Beat softened butter until smooth. Slowly add powdered sugar to avoid a sugar cloud.
- Blend in strawberry puree or remaining thawed strawberries. Adjust thickness with milk or powdered sugar.
- Frost the cooled cake. For a decorative touch, swirl the frosting with a spoon and top with sliced strawberries.
Notes
For added flavor, consider adding a teaspoon of strawberry extract if the strawberries taste bland. This cake is best served chilled on warm days.
