  • 1 cup mashed ripe bananas The riper, the better.
  • 1 cup sliced strawberries Fresh or thawed from frozen.
  • 1 cup milk Dairy or non-dairy milk like almond or oat milk.
  • 2 large eggs Can be substituted with flax eggs or applesauce for egg-free.
  • 1 teaspoon baking powder Double check for gluten-free.
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 pinch salt
For serving (optional)
  • 1 cup Greek yogurt Great topping.
  • 1 tablespoon peanut butter For added richness.
  • 1 tablespoon honey or maple syrup Adjust sweetness to taste.
  • 1/4 cup chopped walnuts or sliced almonds For a crunchy texture.
  • 1/4 cup mini chocolate chips If desired for sweetness.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the rolled oats, baking powder, cinnamon, and salt.
  3. In another bowl, whisk the eggs, then add in the mashed bananas, milk, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients, then fold in the sliced strawberries.
Baking
  1. Pour the mixture into a greased 8x8 baking dish.
  2. Bake for 30 minutes or until set and a toothpick comes out clean.
Serving
  1. Let it cool for 10-15 minutes before slicing into squares.
  2. Serve warm with optional toppings like Greek yogurt, nut butter, or honey.

Notes

Store leftovers in the fridge for up to 5 days. Reheat in the microwave for best results. Can be made egg-free and gluten-free with proper ingredient swaps.
