Ingredients
  

Main Ingredients
  • 4 cups fresh baby arugula Any arugula works, but baby arugula is preferred.
  • 1 cup ripe strawberries, sliced Choose ripe strawberries for the best flavor.
  • 1/2 cup feta cheese, crumbled Goat cheese can be used as a substitute.
  • 1/3 cup toasted nuts (almonds or walnuts) Toast nuts for better flavor, takes about 3 minutes.
  • 1/2 cup cucumber slices or thin red onion (optional) Adds a sharper bite.
  • 1/4 cup balsamic dressing Homemade or store-bought balsamic vinaigrette.

Method
 

Prepare the Dressing
  1. In a small jar, combine balsamic vinegar, olive oil, honey (or maple syrup), a pinch of salt, and black pepper.
  2. Shake vigorously for 10 seconds and adjust seasoning if necessary.
Assemble the Salad
  1. In a large bowl, add arugula.
  2. Top with sliced strawberries and sprinkle on feta cheese.
  3. Add toasted nuts and optional cucumber or onion.
  4. Drizzle dressing lightly over the salad.
  5. Toss gently, using only half of the dressing to start, and add more if desired.

Notes

Best enjoyed fresh but can be prepped ahead. Store ingredients separately and dress just before serving to maintain arugula freshness.
