Starbucks Lemon Loaf

A homemade version of Starbucks Lemon Loaf that is moist, tender, and full of lemon without being sour. Perfect for coffee, tea, or a sweet treat.

Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour Spoon it into your measuring cup and level it off.
  • 1 tbsp baking powder
  • 1 tsp salt
Wet Ingredients
  • 1/2 cup unsalted butter Softened
  • 1/4 cup neutral oil For moisture
  • 1 cup granulated sugar To sweeten
  • 3 large eggs Room temperature
  • 1 tbsp lemon zest
  • 1/4 cup lemon juice Freshly squeezed
  • 1 tsp vanilla extract
  • 1/2 cup sour cream or Greek yogurt For tenderness
Glaze
  • 1 cup powdered sugar
  • 2 tbsp lemon juice Start with less and adjust as needed
  • pinch salt Enhances the lemon flavor

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In one bowl, mix the dry ingredients: flour, baking powder, and salt.
  3. In another bowl, mix the softened butter, oil, and sugar until creamy.
  4. Add eggs one at a time, then stir in lemon zest, lemon juice, and vanilla.
  5. Mix in sour cream or Greek yogurt until combined.
  6. Add the dry ingredients and stir just until there are no dry flour spots.
  7. Pour the batter into the prepared loaf pan.
Baking
  1. Bake in the preheated oven for 45-50 minutes, or until a toothpick comes out with a few moist crumbs.
  2. Cool the loaf completely in the pan before glazing.
Glazing
  1. Once the loaf is cool, mix the powdered sugar, lemon juice, and salt to make the glaze.
  2. Drizzle the glaze over the cooled loaf and let it set for 20-30 minutes before slicing.

Notes

Store in an airtight container for up to 3 days. It can also be refrigerated for 5-6 days or frozen for up to 2 months.
