  • 1 cup packed cup finely chopped fresh spinach or thawed frozen spinach, squeezed very dry Make sure to squeeze out as much water as possible from frozen spinach.
  • 1 cup shredded mozzarella Provides a stretchy texture.
  • 1 cup shredded Parmesan or Asiago Adds crunch and salty flavor.
  • 2 tablespoons cream cheese or sour cream Helps bind the mixture.
  • 1 small clove garlic, minced, or 1/2 teaspoon garlic powder Enhances flavor.
  • 1/2 teaspoon onion powder Adds depth to the flavor.
  • 1/4 teaspoon red pepper flakes, optional For a spicy kick.
  • Salt and black pepper to taste Adjust according to preference.

Method
 

Preparation
  1. Heat the oven to 375°F (190°C). Line a large baking sheet with parchment paper and lightly mist with oil.
  2. In a bowl, mix together mozzarella, Parmesan, spinach, cream cheese, garlic, onion powder, and red pepper flakes. Add a pinch of salt and pepper. The mixture should clump when pressed.
  3. Use a tablespoon to scoop small mounds of the mixture onto the prepared baking sheet, spacing them at least 2 inches apart. Flatten each mound slightly.
Baking
  1. Bake for 9 to 12 minutes, until the edges are deep golden and the centers are bubbly.
  2. Let them cool on the sheet for 5 minutes to firm up, then slide the parchment onto a cooling rack. Once set, peel them off and serve warm or at room temperature.

Notes

These crisps can be stored in an airtight container in the fridge for up to 4 days. Recrisp in a 350°F oven for 3 to 5 minutes or enjoy them chilled.
