Ingredients

For the bread
  • 1 loaf Sourdough boule, French bread, or dinner rolls Choose a sturdy loaf for best results.
For the filling
  • 8 oz Cream cheese Softened for easy mixing.
  • 1/2 cup Sour cream or Greek yogurt Adds creaminess to the filling.
  • 2 cloves Minced garlic For flavor.
  • 1 cup Chopped artichokes Drained well to avoid sogginess.
  • 1 cup Fresh spinach or 1 cup frozen spinach (thawed and drained) If using frozen, squeeze out as much moisture as possible.
  • 1 cup Mozzarella cheese, shredded Shred your own for better melt.
  • 1/4 cup Parmesan cheese, grated For a salty bite.
  • 1 tsp Salt To taste.
  • 1/2 tsp Black pepper To taste.
  • 1/4 tsp Crushed red pepper flakes Optional for some heat.

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. If using fresh spinach, chop and cook it in a pan for 1-2 minutes until wilted, then let it cool and squeeze out moisture.
  3. In a mixing bowl, combine softened cream cheese, sour cream or Greek yogurt, minced garlic, chopped artichokes, spinach, mozzarella cheese, and Parmesan cheese. Season with salt, pepper, and crushed red pepper flakes.
  4. Cut the bread in a crosshatch pattern, being careful not to cut all the way through.
  5. Use a small spoon or butter knife to fill the cuts generously with the spinach-artichoke mixture.
Baking
  1. Wrap the loaf in foil and bake for 15-20 minutes.
  2. Remove the foil and bake for an additional 8-12 minutes, until the bread is golden and crispy.
  3. Let cool for about 5 minutes before serving.

Notes

You can prepare the filling ahead of time and store it in the fridge. Reshape the loaf and bake when ready. For serving, place it in the center of the table with napkins, and encourage guests to pull apart pieces.
