For the Chicken Rolls
  • 4 pieces boneless, skinless chicken breasts
  • 2 cups fresh spinach Frozen is acceptable; squeeze out excess water.
  • 1 cup crumbled feta cheese
  • 1 tablespoon olive oil For browning the rolls
  • 1 teaspoon garlic powder Optional
  • 1 medium onion Chopped, optional
  • to taste salt
  • to taste black pepper
  • to taste crushed red pepper flakes Optional for extra kick
  • toothpicks toothpicks To secure rolls

Method
 

Preparation
  1. Flatten the chicken breasts evenly, but not too thin.
  2. Place a scoop of cooked spinach and a crumble of feta on each piece.
  3. Roll the chicken up and secure with toothpicks.
Cooking
  1. Heat olive oil in a pan and brown each chicken roll for a few minutes.
  2. Preheat the oven to 375°F (190°C) and transfer the rolls to the oven.
  3. Bake for 25-30 minutes, or until cooked through and juicy.
  4. Let the rolls rest for a few minutes before slicing to avoid losing cheese.

Notes

Pro tip: Don't overstuff to prevent filling from leaking. Pat spinach dry to avoid a soggy filling. Use plastic wrap when flattening chicken to reduce mess.
