Spinach and Artichoke Dip

Ingredients
  

Dip Ingredients
  • 8 oz cream cheese, softened Softening helps with blending.
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise Gives richness to the dip.
  • 1 cup shredded mozzarella Extra cheese option available.
  • 1/4 cup grated Parmesan
  • 2 cloves garlic, minced Adjust for more garlicky flavor.
  • 1 pinch salt
  • 1 pinch pepper
  • 1 cup chopped artichoke hearts Drain well.
  • 1 cup well-drained spinach Frozen spinach should be squeezed dry.

Method
 

Preparation and Cooking
  1. Spray the inside of your slow cooker with nonstick spray.
  2. Add softened cream cheese, sour cream, mayo, shredded mozzarella, grated Parmesan, minced garlic, salt, and pepper.
  3. Stir in the chopped artichoke hearts and well-drained spinach.
  4. Cook on LOW for about 2 hours, stirring every 30 minutes.
  5. When hot and creamy, switch to WARM for serving.

Notes

Variations include making it extra cheesy or spicy, or adding bacon for a protein boost. Made ahead of time, the dip tastes even better after flavors meld together. Be careful to drain spinach and artichokes well to prevent a watery dip.
