Spicy Tuna Crispy Rice

Ingredients
  

For the crispy rice
  • 2 cups sushi rice (or short grain rice) Provides the sticky, sliceable base.
  • 1 tablespoon rice vinegar For classic sushi rice tang.
  • 1 teaspoon sugar Enhances flavor.
  • 1 teaspoon salt For seasoning the rice.
  • neutral oil for frying the rice Like canola or avocado oil.
  • Optional toppings: sesame seeds, sliced scallions, jalapeno, cucumber, avocado, nori strips Enhance presentation and flavor.
For the spicy tuna topping
  • 8 ounces sushi grade tuna, diced small Keep it cold until mixing.
  • 2 tablespoons Japanese mayo (Kewpie if you can) Regular mayo works too.
  • 1 tablespoon sriracha or chili sauce Adjust to your heat level.
  • 1 teaspoon soy sauce Adds depth of flavor.
  • 1 teaspoon sesame oil Optional for toasted flavor.

Method
 

Preparation
  1. Cook sushi rice according to package instructions. While warm, mix rice vinegar with sugar and salt, then fold into the rice. Taste to ensure it's lightly seasoned.
  2. Line a small pan with plastic wrap or parchment, press rice firmly about half an inch thick. Cover and chill for at least 2 hours, overnight is better.
  3. Lift the rice out and cut into small rectangles or squares, approximately 2 inches each.
Crisping
  1. Heat a skillet with enough oil to coat the bottom. Fry the rice pieces until golden and crisp, flipping to crisp the other side. Drain on a rack or paper towels and sprinkle with salt.
Tuna Preparation
  1. Dice the tuna and mix with mayo, sriracha, and soy sauce. Add sesame oil if desired. Adjust the heat level as preferred.
Assembly
  1. Top each crispy rice piece with a spoonful of spicy tuna. Add optional toppings like scallions, sesame seeds, jalapeno, or thin cucumber slices. Serve immediately.

Notes

For best texture, chill the rice long enough and press it firmly. Crisp just before serving to maintain crunchiness. Use a sharp knife to cut chilled rice for clean edges.
