Preparation
- Cook sushi rice according to package instructions. While warm, mix rice vinegar with sugar and salt, then fold into the rice. Taste to ensure it's lightly seasoned.
- Line a small pan with plastic wrap or parchment, press rice firmly about half an inch thick. Cover and chill for at least 2 hours, overnight is better.
- Lift the rice out and cut into small rectangles or squares, approximately 2 inches each.
Crisping
- Heat a skillet with enough oil to coat the bottom. Fry the rice pieces until golden and crisp, flipping to crisp the other side. Drain on a rack or paper towels and sprinkle with salt.
Tuna Preparation
- Dice the tuna and mix with mayo, sriracha, and soy sauce. Add sesame oil if desired. Adjust the heat level as preferred.
Assembly
- Top each crispy rice piece with a spoonful of spicy tuna. Add optional toppings like scallions, sesame seeds, jalapeno, or thin cucumber slices. Serve immediately.
Notes
For best texture, chill the rice long enough and press it firmly. Crisp just before serving to maintain crunchiness. Use a sharp knife to cut chilled rice for clean edges.
