Ingredients
  

For the Queso Fundido
  • 8 oz Shredded Oaxaca cheese You can substitute with low moisture mozzarella.
  • 4 oz Chorizo (pork or beef) Alternatively, use sautéed mushrooms and peppers for a vegetarian option.
  • 1 medium Onion, chopped Optional for added flavor.
  • 2 cloves Garlic, minced Optional for added flavor.
  • 2 medium Jalapeños, sliced Use fresh for brightness and pickled for tang.
  • 2 tbsp Tomatoes or salsa For topping.
  • 1 pinch Cumin For flavor enhancement.
  • 1 pinch Smoked paprika For flavor enhancement.
  • to taste to taste Salt Adjust according to taste.

Method
 

Cooking
  1. Put your skillet over medium heat. Add the chorizo and cook until browned and cooked through, breaking it up as you go.
  2. Add chopped onion and cook for a couple of minutes until softened. Then, add minced garlic and sliced jalapeños, cooking for about 30 seconds.
  3. Reduce heat to low. Sprinkle in the shredded cheese in handfuls, stirring gently until melted.
  4. For a bubbly top, place the skillet under the broiler for 1 to 3 minutes, being careful not to burn it.
  5. Top with diced tomatoes or salsa and serve immediately.

Notes

For a smoother melt, shred your own cheese. If it thickens as it sits, rewarm gently. Serve with tortilla chips, warm tortillas, or fresh veggies.
