Main Ingredients
  • 2 cups cooked rice Cold rice is best, even day-old rice.
  • 1 lb chicken (thighs or breast) Chopped small.
  • 2 large eggs Perfect for a big skillet.
  • 2 cups mixed veggies Frozen peas, carrots, bell pepper, corn, or whatever you have.
  • 2 cloves garlic Do not skip if you can help it.
  • 1 stalk green onion Do not skip if you can help it.
  • 3 tbsp soy sauce Adjust to taste.
  • 1 tbsp sesame oil If available.
  • to taste heat sauce Like sriracha, chili garlic sauce, or crushed chili flakes.

Cooking
  1. Heat your pan first to ensure the chicken browns and prevents steaming.
  2. Add a little oil, cook the chicken with salt and pepper until browned, then move to a plate.
  3. Add more oil and scramble the eggs in the pan until slightly soft.
  4. Toss in garlic, green onions, and veggies. Stir for 1-2 minutes.
  5. Add the cold rice, breaking it up with a spoon. Let it sit for 20-30 seconds before stirring for toasty bits.
  6. Return the chicken to the pan and pour in your sauce. Stir until everything is evenly coated and smells incredible.

Notes

You can easily modify this recipe based on what you have. Try adding different veggies, pineapple for sweetness, or a cornstarch mix for extra saucy fried rice.
