  • 2 teaspoons pumpkin pie spice Use a pre-made mix or a combination of cinnamon, nutmeg, and ginger.
Wet Ingredients
  • 1 cup softened butter Salted or unsalted.
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 cup pumpkin puree Ensure it's 100% pumpkin, not pie filling.
  • 1 egg
  • 1 teaspoon vanilla extract
Toppings
  • 1/4 cup sanding sugar Orange sanding sugar or a mix of sugar and orange sprinkles.

Preparation
  1. In a large bowl, cream together the softened butter and both sugars until fluffy.
  2. Stir in the pumpkin puree, egg, and vanilla extract until well combined.
  3. Gradually add the dry ingredients until the dough comes together.
  4. Chill the dough in the refrigerator for about 30 minutes to prevent stickiness.
Baking
  1. Preheat your oven to 350°F (175°C).
  2. Form the chilled dough into balls and flatten them slightly.
  3. Use a butter knife to create grooves on each cookie.
  4. Sprinkle the tops with sanding sugar before baking.
  5. Bake in the preheated oven for 10-12 minutes, or until lightly golden.
  6. Let them cool before serving.

Notes

For variations, consider adding mini chocolate chips, coconut flakes, or a drizzle of maple glaze. Allow kids to get creative with toppings!
