Soy Marinated Eggs

Ingredients
  

For the Marinade
  • 1 cup Soy sauce Regular soy sauce works best. Use low sodium if preferred.
  • 1 cup Water To dilute the marinade.
  • 2 tablespoons Sugar White or brown sugar; brown adds depth.
  • 2 cloves Garlic Lightly smashed.
  • 2 slices Ginger Optional but adds nice flavor.
  • 2 stalks Green onion Adds freshness.
  • 1 teaspoon Sesame oil A tiny drizzle at the end for aroma.
  • to taste Chili flakes Optional for heat.
For the Eggs
  • 4 Large eggs Use fresh, large eggs.

Method
 

Preparation
  1. Bring a pot of water to a gentle boil. Carefully lower the eggs in and set a timer for your desired doneness (7 minutes for jammy yolk, 9 for more set). Move them to an ice bath afterward.
  2. Peel the eggs under running water to help remove the shell easily.
  3. In a small pot, combine soy sauce, water, and sugar. Warm it just enough to dissolve the sugar, then turn off the heat and add garlic, ginger, and green onion. Let it cool.
  4. Place the peeled eggs in a snug container and pour the cooled marinade over them. Cover and refrigerate. Flip the eggs once or twice if they are not fully submerged.
  5. After marinating (at least 6 hours, preferably overnight), slice the eggs in half and spoon some marinade over the top before serving.

Notes

Best eaten within 3 to 4 days. Keep refrigerated while marinating. Adjust soak time based on your preference for saltiness and flavor intensity.
