Main ingredient
  • 2 cups seedless grapes Green or red grapes, green are more tart

Method

Preparation
  1. Wash and dry the grapes. Rinse them well and dry with paper towels, letting them air dry for 10 to 15 minutes.
  2. Make the sour sugar mix: In a bowl, mix 1/2 cup sugar with 1 to 2 teaspoons citric acid. Add salt if desired.
  3. Make the sticky coating base: In another bowl, combine 1 tablespoon light corn syrup (or honey) with a few drops of water if needed.
Coating the grapes
  1. Drop a handful of grapes into the syrup mixture and toss gently, then move them into the sour sugar bowl and roll until fully coated.
  2. Repeat with small batches to ensure even coating.
Chill
  1. Spread the coated grapes out on a parchment-lined plate or tray and chill in the fridge for at least 45 minutes.
  2. Taste and adjust: If you want more sourness, sprinkle in more citric acid and roll some grapes again.

Notes

These grapes are best enjoyed the same day. Store in an airtight container for up to 2 days. Separate layers with parchment paper if stacking.
