Preparation
- Preheat your oven to 350°F and line a baking sheet with parchment paper.
- Whisk flour, baking powder, and salt in a bowl.
- Cream softened butter and sugar until fluffy, about 1 to 2 minutes.
- Mix in the egg and vanilla.
- Mix in the sour cream or Greek yogurt.
- Add the dry ingredients and mix just until you do not see flour anymore. Do not overmix.
Baking
- Scoop dough balls and gently flatten just a bit with your fingers.
- Bake for 8 to 10 minutes. The centers should look set but not browned.
- Cool on the pan for 5 minutes, then move to a rack.
Notes
To keep cookies soft, store them in an airtight container after cooling completely. Add a slice of bread to the container for overnight softness.
