Fritter Filling
  • 8 pieces Graham crackers Split in half for sandwiches
  • 8 pieces Mini marshmallows Can use larger marshmallows if preferred, but chill them first
  • 4 pieces Chocolate bars Milk chocolate recommended for best results
Batter
  • 1 cup All-purpose flour For the fritters
  • 2 tablespoons Sugar Adds sweetness to the batter
  • 1 teaspoon Baking powder For leavening
  • 1 pinch Salt
  • 1 cup Milk To achieve the right batter consistency
  • 1 large Egg For binding the batter
  • 1 teaspoon Vanilla extract Enhances the flavor of the batter
Dipping Sauce Ideas
  • 1 cup Chocolate ganache Warm cream poured over chocolate and stirred until smooth
  • 1 cup Marshmallow fluff dip Mix fluff with cream cheese and whip
  • 1 cup Salted caramel Store-bought is fine, just warm slightly

Method

Preparation
  1. Make the filling by sandwiching chocolate and a marshmallow between two halves of a graham cracker.
  2. Chill the sandwiches in the freezer for 15 to 20 minutes for best results.
  3. In a bowl, mix the dry batter ingredients together: flour, sugar, baking powder, and salt.
  4. In another bowl, whisk together the milk, egg, and vanilla extract, then combine with the dry ingredients.
Cooking
  1. Heat oil in a deep pot to around 350°F (175°C).
  2. Dip each chilled sandwich into the batter, allowing excess batter to drip off.
  3. Carefully lower the fritters into the hot oil and fry for 1 to 2 minutes per side until golden brown.
  4. Remove the fritters and let them drain on a rack or paper towels, dust with powdered sugar if desired.
Serving
  1. Serve warm with your choice of dipping sauces.

Notes

For best results, fry in small batches and keep the oil temperature consistent. These fritters are best enjoyed fresh but can be prepped in advance for parties.
