Method
Preparation
- Preheat your oven to 350°F (175°C). Line a 9x13 inch pan with parchment paper for easy lifting.
- Crush graham crackers into fine crumbs and mix with melted butter and a spoonful of sugar. Press the mixture into the bottom of the prepared pan.
Making the Cookie Layer
- In a bowl, cream together melted or softened butter, brown sugar, and granulated sugar until glossy.
- Mix in the eggs and vanilla extract.
- Stir in the flour, baking powder, and salt until there are no dry ingredients left.
Assembly
- Spread about two-thirds of the cookie dough over the crust, then add the chocolate layer, followed by scattered marshmallows.
- Dollop the remaining cookie dough on top in little pieces. Don't worry about covering everything perfectly; gaps will create gooey spots.
Baking
- Bake for 25 to 30 minutes until the top looks golden and edges are set.
- If the marshmallows need more toasting, turn on the broiler for 30 to 60 seconds but watch closely.
- Allow to cool for at least 30 minutes before slicing.
Notes
For extra gooey bars, use big marshmallows cut in half, do not overbake, layer chocolate in chunks, and cool properly for neat slices. Variations include a no-bake version or Rice Krispie s'mores.
