Preparation
- Preheat your oven to 400°F (200°C) and line a sheet pan with foil or parchment.
- Slice the smoked sausage into 1 to 1.5 inch pieces and make small cuts (4 to 6) across the top without slicing all the way through.
- Toss the sausage pieces with oil or melted butter, garlic powder, paprika, black pepper, and brown sugar or honey if using.
Cooking
- Spread the sausage pieces on the sheet pan and bake for about 14 to 18 minutes, flipping halfway through, until browned and the cuts open up.
- For extra crisp, broil the sausage bites for 1 to 2 minutes at the end, keeping a close watch to prevent burning.
Making the Dipping Sauce
- In a small bowl, mix together mayo, Dijon mustard, yellow mustard, honey or brown sugar, apple cider vinegar or lemon juice, garlic powder, and black pepper.
- Taste the sauce and adjust seasoning, adding more vinegar for tang or cayenne for heat if desired.
Serving
- Serve the smoked sausage bites warm with the mustard dipping sauce on the side.
Notes
You can prepare the sausage bites ahead of time, store them in the fridge, and bake them right before serving for the best texture.
