Smoked Sausage and Vegetable Sheet Pan Dinner

Main Ingredients
  • 1 lb Smoked sausage (any fully cooked variety) Slice into coins for even browning.
  • 1 lb Baby potatoes Halved or regular potatoes chopped small.
  • 2 cups Bell peppers Use red or orange for sweetness.
  • 1 cup Onion Yellow or red, cut into chunks.
  • 2 cups Broccoli or green beans Broccoli gets crispy edges when roasted.
  • 2 tbsp Olive oil Adjust as needed to coat vegetables.
Seasonings
  • 1 tsp Garlic powder
  • 1 tsp Paprika
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1/2 tsp Dried oregano
  • 1/4 tsp Chili flakes Optional for added heat.

Method
 

Preparation
  1. Preheat your oven to 425°F.
  2. Line a large sheet pan with foil or parchment for easier cleanup.
  3. Chop baby potatoes small and keep bell peppers and onions in larger chunks.
  4. Toss potatoes with olive oil, salt, pepper, garlic powder, and paprika. Spread them out on the pan and roast for 10 to 12 minutes.
  5. While the potatoes start cooking, slice the smoked sausage and prep the other vegetables.
Cooking
  1. After 10 to 12 minutes, remove the pan from the oven. Add the sliced sausage, bell peppers, onion, and broccoli (or green beans) to the pan.
  2. Drizzle with a bit more olive oil if needed and toss everything on the pan.
  3. Roast for an additional 15 to 20 minutes, stirring once halfway through, until the potatoes are tender and edges are browned.
  4. Taste and finish with a squeeze of lemon or a splash of vinegar for brightness, if desired.

Notes

Experiment with different vegetables and seasonings according to your preferences. Avoid overcrowding the pan to ensure proper roasting.
