Main ingredients
  • 2 medium Cucumbers English cucumbers are preferred due to fewer seeds
  • 8 ounces Smoked salmon Thin slices are easiest to fold
  • 8 ounces Cream cheese Plain or herb flavored works well
  • 1 medium Fresh lemon For zest and juice
  • 2 tablespoons Fresh dill or chives Use fresh if possible
  • to taste Black pepper

  • to taste Red onion slices
  • to taste Everything bagel seasoning

Method
 

Preparation
  1. Wash and dry your cucumbers, then slice them into thick coins, about half an inch thick.
  2. Scoop a small amount of the center seeds out if the cucumbers are watery (optional).
  3. In a small bowl, combine cream cheese with lemon zest, a squeeze of lemon juice, chopped dill or chives, and black pepper.
Assembly
  1. Spread or pipe a small amount of the cream cheese mixture onto each cucumber slice.
  2. Fold the smoked salmon into ribbons and place a piece on top of each cucumber slice.
  3. Finish with extra herbs, seasoning, capers, or red onion on top.

Notes

For the best flavor, prepare the cream cheese mixture a day ahead. Slice cucumbers closer to serving time for extra crunch. Serve with fresh fruit or crackers for a complete appetizer.
