Bagel Base
  • 1 piece Bagel Plain, sesame, or everything bagels work well.
Main Ingredients
  • 2 ounces Smoked salmon Look for soft slices.
  • 1/2-1 piece Ripe avocado Should be slightly soft when pressed.
  • 2 tablespoons Cream cheese Plain or herb cream cheese is recommended.
Toppings
  • 1 tablespoon Lemon juice Wakes up the avocado and balances the salmon.
  • 1 slice Red onion Thin slices for crunch.
  • 1-2 teaspoons Capers Optional, for a salty pop.
  • to taste Black pepper Use heavily for flavor.
  • to taste Fresh dill or parsley For added freshness.

Method
 

Preparation
  1. Toast the bagel until the edges get crisp, keeping the inside chewy.
  2. In a small bowl, mash half to one whole avocado with a squeeze of lemon juice and a pinch of salt and black pepper.
  3. Spread cream cheese on the toasted bagel to prevent sogginess.
  4. Spoon the mashed avocado on top of the cream cheese and smooth it out.
  5. Layer the smoked salmon, folding it for a fuller appearance.
  6. Add red onion, capers if using, a dash of black pepper, and fresh herbs on top.

Notes

For added crunch, include thinly sliced cucumber or radish. You can also make this bagel more filling by adding a poached or fried egg.
