Preparation
- Heat a large skillet or griddle over medium-high heat until very hot.
- Divide beef into small balls, about 2 to 3 ounces each.
- Place a tortilla on the counter. Put a beef ball on top and press it flat into a very thin layer that reaches close to the edges. Season with salt and pepper.
Cooking
- Put the tortilla beef side down on the hot pan. Press with a spatula for 10 seconds to sear.
- Cook for 2 to 3 minutes until the edges look browned and crispy.
- Flip so the tortilla is down. Add cheese on top of the beef. Cook for 1 minute to warm the tortilla and melt cheese.
- Slide off and add sauce, lettuce, pickles, and onions, then fold and eat immediately.
Notes
These tacos are best enjoyed immediately after cooking to preserve the crispy texture. Prep toppings in advance to streamline serving.
