  • 1 lb Boneless skinless chicken breasts or thighs Thighs stay extra juicy
  • 2 cans Canned white beans (Cannellini or great northern) Rinse and drain before adding
  • 1 medium Onion Adds sweetness and depth
  • 3 cloves Garlic Can use jarred garlic as a substitute
  • 1 can Canned mild green chiles Adds flavor without too much spice
  • 4 cups Low sodium chicken broth Helps control the saltiness
Spices
  • 1 tsp Cumin
  • 1 tsp Chili powder
  • 1 tsp Oregano
  • to taste Salt
  • to taste Pepper
Creamy Element
  • 8 oz Cream cheese Can substitute with sour cream or heavy cream
Optional Ingredients
  • 1 cup Corn Adds a little sweetness
  • 1 lime Lime Squeeze at the end for freshness

Method
 

Preparation
  1. Add diced onion, minced garlic, beans, green chiles, and corn to the slow cooker.
  2. Place chicken breasts or thighs on top of the base ingredients.
  3. Pour chicken broth and add cumin, chili powder, oregano, salt, and pepper. Stir gently.
  4. Cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours, until chicken is easy to shred.
  5. Shred the chicken with two forks and return to the slow cooker.
  6. Stir in cream cheese cubes and let sit with the lid on for 15 to 20 minutes.
  7. Squeeze in lime juice, and adjust salt and pepper to taste. Add extra broth for desired consistency.

Notes

For best texture, do not add dairy too early. Thighs are recommended for juicy chicken. Mix in more toppings to customize.
