  • 1 lb Boneless skinless chicken breasts Thighs can be used for extra tenderness.
  • 2 cans Cannellini or great northern beans, rinsed and drained They turn creamy while cooking.
  • 1 Onion, diced A must-have for flavor.
  • 3 cloves Garlic, minced Essential for the base flavor.
  • 1 can Mild canned green chiles Start with one small can for a gentle flavor.
  • 4 cups Chicken broth Use low sodium if preferred.
Spices and Seasoning
  • 1 tsp Cumin
  • 1 tsp Oregano
  • 1 tsp Smoked paprika (optional)
  • 1 tsp Salt Adjust to taste.
  • 1 tsp Black pepper Adjust to taste.
Finishing Touch
  • 2 Tbsp Lime juice Add at the end for brightness.

Method
 

Preparation
  1. Place the chicken, beans, onion, garlic, green chiles, and chicken broth into the slow cooker.
  2. Add the cumin, oregano, paprika, salt, and pepper. Stir to combine.
Cooking
  1. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until chicken shreds easily.
  2. For a thicker stew, scoop out a cup of beans, mash them, and stir back in.
Serving
  1. Just before serving, add lime juice and stir.
  2. Serve with warm bread, tortilla chips, or over rice.

Notes

This stew is perfect for leftovers and tastes even better the next day. Store in the fridge for up to 4 days or freeze for up to 3 months. Reheat gently, adding broth if needed.
