Preparation
- Place the chicken, beans, onion, garlic, green chiles, and chicken broth into the slow cooker.
- Add the cumin, oregano, paprika, salt, and pepper. Stir to combine.
Cooking
- Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until chicken shreds easily.
- For a thicker stew, scoop out a cup of beans, mash them, and stir back in.
Serving
- Just before serving, add lime juice and stir.
- Serve with warm bread, tortilla chips, or over rice.
Notes
This stew is perfect for leftovers and tastes even better the next day. Store in the fridge for up to 4 days or freeze for up to 3 months. Reheat gently, adding broth if needed.
