Preparation
- Season the pork tenderloin all over with salt and pepper.
- Optional: Sear the pork in a hot pan with a splash of oil for 5 minutes to enhance flavor and appearance.
- Layer the sliced apples and onion in the bottom of the slow cooker.
- Whisk together the apple cider, Dijon mustard, brown sugar, and cinnamon, then pour over the fruits.
- Place the pork on top and dot with butter.
Cooking
- Cover and cook on low for about 2.5 to 4 hours, depending on thickness.
- Aim for an internal temperature of 145°F, then let rest for 5 to 10 minutes before slicing.
- If the sauce is thin, remove the pork, turn the cooker to high, stir in the cornstarch slurry, and let bubble for 5 to 10 minutes until thickened.
Notes
Serve with mashed potatoes, rice, or buttered noodles. Leftovers taste great and can be stored in the fridge for 3-4 days or frozen for up to 2 months. Reheat gently to maintain tenderness.
