  • 2 pounds chicken breasts or thighs
  • 1 medium onion, diced
  • 2 cloves garlic, minced (or 1 teaspoon garlic powder) Use garlic powder when short on time.
  • 1 packet ranch seasoning (or 2 to 3 tablespoons homemade blend)
  • 1 to 2 teaspoons chili powder Adjust based on spice preference.
  • 1 teaspoon cumin
  • to taste Salt and pepper
  • 1 can black beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chiles (or plain diced tomatoes) Use plain for a milder chili.
  • 2 cups chicken broth
  • 8 ounces cream cheese, cubed
  • 1 to 2 cups shredded cheddar cheese Adjust to taste.
  • to taste Optional: cooked crumbled bacon, lime wedges, cilantro, jalapenos

Method
 

Preparation
  1. Add the chicken to the slow cooker.
  2. Sprinkle ranch seasoning, chili powder, cumin, and a little salt and pepper right on top.
  3. Add onion, garlic, beans, corn, diced tomatoes with green chiles, and chicken broth.
  4. Give it a quick stir around the chicken.
Cooking
  1. Cook on low for 6 to 7 hours or high for 3 to 4 hours, until the chicken shreds easily.
  2. Pull the chicken out, shred it with two forks, then put it back in.
  3. Add the cream cheese cubes and put the lid back on for about 20 to 30 minutes to soften.
  4. Stir well until the cream cheese melts into the chili and turns everything creamy.
  5. Add shredded cheddar and stir again.
  6. Taste and adjust seasoning as needed.

Notes

This chili is versatile; adjust ingredients based on what you have. For serving, set out toppings for customization. Leftovers are great and thicken in the fridge.
