  • 2 pounds Boneless skinless chicken breasts or thighs
  • 8 ounces Sliced ham or diced ham
  • 8 ounces Swiss cheese (slices or shredded)
  • 1 can Cream of chicken soup
  • 1 cup Sour cream or plain Greek yogurt
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1/2 teaspoon Pepper
  • 1/4 teaspoon Salt
  • 1 teaspoon Dijon mustard (optional)
  • 4 tablespoons Butter
  • 1 cup Breadcrumbs or crushed buttery crackers

Method
 

Preparation
  1. Spray your slow cooker insert with non-stick spray to ease cleanup.
  2. Add chicken in a single layer and sprinkle with garlic powder, onion powder, and pepper.
  3. Add ham over the chicken, spread evenly. Top with Swiss cheese.
  4. In a bowl, mix the cream of chicken soup and sour cream, adding Dijon if using. Pour over the layers, spreading gently.
Cooking
  1. Cook on LOW for 3 to 5 hours until chicken is cooked through and easy to shred.
  2. Shred or cube the chicken right in the slow cooker and stir everything together.
  3. In a small bowl, melt butter and mix it with breadcrumbs or crushed crackers. Sprinkle over the top.
  4. If your slow cooker has a browning function, use it to brown the topping. If not, toast it in the oven for a few minutes before serving.

Notes

For a little extra comfort, serve over egg noodles, rice, or mashed potatoes. You can swap out the ham for different meats or add vegetables like steamed broccoli.
