Ingredients
  

Main Ingredients
  • 2 lbs Chicken thighs or breasts Thighs recommended for tenderness.
  • 2 cups Bell peppers Any color; red and yellow preferred.
  • 1 medium Onion Chopped.
  • 3 cloves Garlic Minced.
  • 8 oz Mushrooms Optional, sliced.
  • 28 oz Crushed tomatoes or tomato sauce
  • 2 tbsp Tomato paste For a richer sauce.
  • 2 tbsp Italian seasoning Or a mix of oregano and basil.
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tbsp Olive oil For browning chicken, optional.
  • 1 tbsp Balsamic vinegar Optional splash for flavor.
  • 1 tsp Red pepper flakes Optional for added heat.

Method
 

Preparation
  1. Slice the peppers and onion. Mince the garlic and slice the mushrooms if using.
  2. Layer the vegetables in the bottom of the slow cooker.
  3. Season the chicken with salt, pepper, and Italian seasoning before placing it on top of the vegetables.
  4. Stir together the crushed tomatoes, tomato paste, and additional seasoning, and pour over the chicken and vegetables.
Cooking
  1. Cook on low for 6 to 7 hours or high for 3 to 4 hours, until the chicken is cooked through and tender.
  2. Taste the sauce and adjust seasoning as needed at the end.

Notes

Storage: Refrigerate for 3-4 days; freeze in portions for up to 2-3 months. Reheat gently to avoid drying out the chicken.
