Preparation
- Slice the peppers and onion. Mince the garlic and slice the mushrooms if using.
- Layer the vegetables in the bottom of the slow cooker.
- Season the chicken with salt, pepper, and Italian seasoning before placing it on top of the vegetables.
- Stir together the crushed tomatoes, tomato paste, and additional seasoning, and pour over the chicken and vegetables.
Cooking
- Cook on low for 6 to 7 hours or high for 3 to 4 hours, until the chicken is cooked through and tender.
- Taste the sauce and adjust seasoning as needed at the end.
Notes
Storage: Refrigerate for 3-4 days; freeze in portions for up to 2-3 months. Reheat gently to avoid drying out the chicken.
