Ingredients

Main Ingredients
  • 2 cups uncooked long grain white rice Can also use jasmine or brown rice (adjust liquid and time accordingly).
  • 3 cups chicken broth Use reduced sodium if desired.
  • 1 can cream of chicken soup Traditional choice for flavor.
  • 1 can cream of mushroom soup Optional - mix half and half for extra flavor.
  • 2 pounds chicken breasts or thighs Use whole pieces for best results.
  • 1 teaspoon garlic powder For seasoning.
  • 1 teaspoon onion powder For seasoning.
  • 1 teaspoon black pepper To taste.
  • 1 cup frozen peas or other vegetables Add near the end of cooking to prevent mushiness.

Method

Preparation
  1. In a slow cooker, combine rice, chicken broth, cream of chicken soup, and cream of mushroom soup.
  2. Add in the chicken breasts or thighs, garlic powder, onion powder, and black pepper.
  3. Stir to combine all the ingredients evenly.
Cooking
  1. Cover and cook on low for 4-6 hours or until the chicken is cooked through and the rice is tender.
  2. If using frozen vegetables, add them in during the last 30 minutes of cooking.
  3. Once done, let it sit for 5-10 minutes to allow the sauce to thicken.

Notes

For best results, let the casserole rest before serving. This dish can be made ahead of time or stored for leftovers, with an option to reheat by adding a splash of broth or milk to restore creaminess.
