Preparation
- If desired, brown the beef in a skillet for deeper flavor and color.
- Layer the onions, carrots, and potatoes in the bottom of the slow cooker.
- Add the beef and mushrooms on top of the vegetable layer.
- In a separate bowl, stir together the beef broth, tomato paste, Worcestershire sauce, salt, pepper, thyme, and the bay leaf.
- Pour the broth mixture over the beef and vegetables.
- Cook on low for about 8 hours or on high for 4 to 5 hours, until the beef is fork-tender.
Thickening and Serving
- If you prefer a thicker stew, mix cornstarch with a little cold water and stir it in for the last 20 to 30 minutes.
- Taste and adjust seasoning as needed before serving.
- Let the stew sit with the lid off for about 10 minutes before serving to thicken slightly.
Notes
