  • 3 lb Chuck roast Cut into 2-3 large chunks for even cooking.
  • 2 cups Apple cider Fresh apple cider is recommended.
  • 1 cup Beef broth Chicken broth can be used as a lighter alternative.
  • 2 each Carrots Chopped.
  • 1 each Onion Sliced.
  • 2 tbsp Apple cider vinegar To balance sweetness.
  • 2 tsp Dried thyme Or fresh, if available.
  • 1 tsp Dried rosemary Or fresh, if available.
  • Salt to taste Salt Use sparingly as flavors will concentrate.
  • Pepper to taste Black pepper Use fresh ground for best flavor.

Method
 

Preparation
  1. If desired, brown the chuck roast in a hot pan for 8-10 minutes before adding to the slow cooker.
  2. Place the roast into the slow cooker and surround it with chopped carrots and onions.
  3. Pour apple cider and beef broth over the roast until it reaches halfway up the sides.
  4. Add apple cider vinegar, thyme, rosemary, salt, and pepper to the slow cooker.
Cooking
  1. Set the slow cooker to low and cook for 8 to 10 hours, until the roast is fork-tender.
  2. Avoid lifting the lid during cooking to maintain temperature.
Serving
  1. Let the roast rest for 10 minutes before slicing.
  2. Serve with mashed potatoes, egg noodles, or crusty bread to soak up the gravy.

Notes

For best texture, avoid cooking on high and do not skip the vinegar to balance sweetness. Leftovers can be used in sandwiches or tacos.
