Ingredients
  

Meat and Vegetables
  • 1 to 1.5 pounds ground beef (or ground turkey)
  • 1 small onion, diced
  • 1 medium bell pepper, diced (optional) Adds flavor and texture
  • 2 to 3 cloves garlic, minced
Sauce Ingredients
  • 1 cup ketchup
  • 2 tablespoons tomato paste (optional) For richer flavor
  • 2 tablespoons brown sugar Adjust to taste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon mustard (yellow or Dijon)
  • to taste Salt and pepper
Topping
  • 1.5 to 2 cups shredded cheddar (or a cheddar blend)
  • 1 can refrigerated biscuit dough or a tube of crescent dough Biscuit dough preferred
  • a pinch chili powder or smoked paprika (optional) For added spice

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13 baking dish.
  2. In a large skillet over medium heat, cook the ground beef with the onion and bell pepper. Break it up as it cooks until the meat is no longer pink, then drain off excess grease.
  3. Add garlic and cook for about 30 seconds until fragrant.
  4. Stir in ketchup, tomato paste, brown sugar, Worcestershire sauce, mustard, salt, pepper, and any additional seasoning. Let simmer for 5 to 8 minutes to thicken.
  5. Pour the sloppy joe mixture into the greased baking dish and sprinkle the cheese on top.
  6. Tear the biscuit dough into 2 to 3 pieces and scatter over the top. If using crescent dough, lay it across and pinch seams.
  7. Bake for 20 to 25 minutes or until the biscuit topping is golden brown and cooked through. Cover with foil if browning too quickly.
  8. Let the casserole sit for 5 to 10 minutes before serving to set up.

Notes

This casserole is forgiving and can be adjusted based on available ingredients. Great for leftovers and can be stored for up to 4 days in the fridge.
