Shrimp and Sausage Cajun Foil Packets

  • 1 lb Large shrimp, peeled and deveined Tails on or off, your choice.
  • 8 oz Smoked sausage, sliced Andouille is recommended, kielbasa also works.
  • 2 cobs Corn on the cob, cut into rounds
  • 1 lb Baby potatoes, halved Quartered if larger.
  • 4 tbsp Butter, melted For Cajun butter mix.
  • 3 cloves Garlic, minced
  • 2 tbsp Cajun seasoning Store bought is acceptable.
  • 1 tsp Old Bay seasoning (optional) For added flavor.
  • 1 medium Lemon, sliced Additional wedges for serving.
  • to taste Salt and pepper Adjust as needed.
  • 2 tbsp Parsley, chopped For garnish.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) or prepare your grill for medium-high heat.
  2. Tear off 4 large pieces of heavy-duty foil, about 12 to 14 inches long.
  3. Par-cook the halved potatoes by microwaving them with a splash of water in a covered bowl for 4 to 6 minutes, or boil for 8 to 10 minutes until just tender.
  4. In a small bowl, mix melted butter, minced garlic, Cajun seasoning, and black pepper. Taste and adjust salt if needed.
Assembly and Cooking
  1. Divide the potatoes, corn, sausage, and shrimp evenly among the foil pieces.
  2. Pour the Cajun butter mix over each packet and top with lemon slices.
  3. Fold the foil to seal each packet, leaving a little space for steam.
  4. Bake for 12 to 15 minutes or grill for about 10 to 12 minutes, flipping once if possible. Shrimp should be pink and firm.
  5. Carefully open the packets to release steam, sprinkle with parsley, and squeeze fresh lemon juice over each serving.

Notes

Consider variations like adding bell peppers, using turkey sausage for a lighter option, or swapping shrimp for salmon or scallops. Customize to your taste preferences.
