Ingredients
  

For the sauce
  • 2 tablespoons olive oil For sautéing
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 pinch chili flakes Add more for extra heat
  • 1 can canned crushed tomatoes Approximately 28 oz
  • 1 teaspoon salt To taste
For the eggs
  • 4 large eggs
For garnish
  • 1 tablespoon fresh parsley or cilantro, chopped Optional
  • 1/4 cup feta cheese, crumbled Optional

Method
 

Preparation
  1. Warm olive oil in a skillet over medium heat.
  2. Add chopped onion and cook until soft, then add garlic for about 30 seconds.
  3. Stir in cumin, paprika, and chili flakes.
  4. Add canned crushed tomatoes and let simmer until thick, about 10 to 15 minutes.
  5. Taste and adjust salt as needed.
  6. Make little wells in the sauce and crack eggs into them.
  7. Cover and cook until whites are set and yolks are at your preferred doneness.
  8. Finish with chopped herbs and feta cheese if desired.

Notes

This dish is versatile - you can add extra vegetables or meats, adjust spice levels, and try different garnishes. Serve with warm bread for dipping.
