Method
Prepare the filling
- Melt butter in a pan over medium-low heat.
- Whisk the eggs with a pinch of salt and pepper, then pour into the pan.
- Stir gently until the eggs are just set; they should be soft, not dry.
- Remove from heat and stir in the cheddar, cream cheese, and green onions.
- Let the filling cool for 10 to 15 minutes.
Assemble the hand pies
- Preheat the oven to 400°F (200°C).
- Unroll the pie crusts and cut into circles or rectangles, making 6 to 8 pieces.
- Scoop 2 to 3 tablespoons of filling onto half of the pieces.
- Brush the edges of the crust with the beaten egg, then place the top piece over it.
- Press the edges firmly and crimp with a fork.
- Cut a small slit on top for steam to escape.
- Brush the tops with egg wash.
- Bake for 18 to 22 minutes, or until golden brown.
Cool and Serve
- Let the pies cool for at least 5 minutes before serving.
Notes
These hand pies can be frozen. To freeze unbaked, assemble, freeze on a tray, and then bag. Bake from frozen, adding extra time. For baked pies, let cool, wrap, and store in a freezer bag for up to 2 months.
