  • 8 ounces mushrooms (crimini or shiitake, white button if budget-minded) Slice chunky for better browning.
  • 2 cloves garlic, minced Adjust amount based on garlic preference.
  • 1 inch ginger, peeled and grated Optional; adds a flavorful bite.
  • 2 tablespoons soy sauce Low sodium is fine.
  • 1 tablespoon vegetable oil Can use canola.
  • 1 teaspoon sesame oil Add at the end for extra flavor.
  • 1 teaspoon hoisin sauce Optional but enhances the dish.
  • 1 pinch chili flakes Adjust based on heat preference.

Method
 

Preparation
  1. Chop off the root of the bok choy and rinse thoroughly to remove dirt.
  2. Slice the bok choy stems and leaves separately.
  3. Slice the mushrooms chunky.
  4. Mince the garlic and grate the ginger.
Cooking
  1. Heat the vegetable oil in a pan over medium-high heat.
  2. Add the bok choy stems and cook for a few minutes.
  3. Add the sliced mushrooms and cook until browned.
  4. Add the bok choy leaves, garlic, and ginger; stir-fry until the leaves are bright green.
  5. Pour in the soy sauce, sesame oil, and hoisin sauce if using. Toss to combine.
  6. Sprinkle with chili flakes, if desired, and serve warm.

Notes

This stir-fry can be paired with jasmine rice or noodles. Feel free to add proteins like chicken or tofu.
