Method
Cooking the Sausage
- Put a large skillet on medium heat. Add the sausage and break it up with a spoon. Cook until it is browned and no longer pink.
- Do not drain the pan unless there is an extreme amount of grease. You need some fat for the flour step.
Making the Gravy
- Sprinkle flour over the sausage. Stir well for about 1 minute.
- Slowly pour in about 2.5 cups of milk while stirring. Keep stirring and let it gently simmer.
- When it thickens, add black pepper. Taste before adding salt, because sausage can be salty on its own.
- If the gravy gets too thick, add a splash more milk and stir. If it is too thin, let it simmer another minute or two.
Finishing Touches
- When the gravy clings to the back of a spoon, it is done.
Notes
This gravy pairs well with warm biscuits, toast, crispy hash browns, or scrambled eggs. Can be made ahead and stored in the fridge. Reheat slowly and add splashes of milk as needed.
