  • 2-3 pieces overripe bananas, mashed Bananas should be soft with lots of brown spots for the best flavor.
  • 1 1/4 cups all-purpose flour
  • 3/4 cup sugar Brown sugar is recommended for extra coziness.
  • 1 piece egg
  • 1/3 cup melted butter or neutral oil
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 teaspoon vanilla extract
  • Caramel sauce for swirling Thick caramel is preferred.
  • Flaky salt for topping Adds a nice salty finish.

Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and grease a standard loaf pan.
  2. In a mixing bowl, mash the overripe bananas until smooth.
  3. Add sugar, melted butter or oil, egg, and vanilla to the mashed bananas, mixing well.
  4. In a separate bowl, combine the flour, baking soda, and salt.
  5. Gradually add the dry mixture to the wet ingredients and stir until just combined, being careful not to overmix.
Swirling Caramel
  1. Pour half of the batter into the greased loaf pan.
  2. Drizzle a few spoonfuls of caramel over the batter and use a butter knife to create a few swirls.
  3. Add the remaining batter and drizzle more caramel on top, swirling gently.
Baking
  1. Bake in the preheated oven for 50 to 65 minutes, checking at 50 minutes.
  2. A toothpick should come out mostly clean; if it hits caramel, a sticky spot is okay.
  3. Once done, allow to cool before slicing.

Notes

To ensure a moist crumb, avoid overmixing and use overripe bananas. You can freeze the banana bread for later enjoyment.
