- Pat the salmon dry and season with salt and pepper.
- Heat olive oil and butter in a pan over medium-high heat.
- Cook the salmon in the hot pan until just barely done, then remove and let it rest.
- Cook the pasta according to package instructions, saving some pasta water before draining.
- In the same pan, sauté minced garlic until fragrant.
- Add cream and lemon zest/juice to the pan, stirring to combine.
- Toss the drained pasta into the sauce, adding reserved pasta water as needed for consistency.
- Flake the salmon into the pasta and toss gently.
- Finish with grated Parmesan and serve immediately.
Notes
Store leftovers in a sealed container and aim to eat within 2 days. Reheat gently on the stovetop with a splash of water or milk to maintain creaminess. For freezing, separate salmon from pasta and sauce if possible.
