  • 2 fillets Salmon (fresh or thawed) Skin on is fine; can be peeled off after cooking.
  • 12 oz Pasta (spaghetti, linguine, penne, or fusilli) Use what you have.
  • 3 cloves Garlic Do not skip; it enhances flavor.
  • 1 large Lemon Zest and juice are recommended.
  • 1 cup Cream or half and half Can be lightened with pasta water.
  • 1 cup Parmesan cheese Adds saltiness and thickens sauce.
  • 2 cups Spinach or peas (optional) For color and nutrient boost.
  • 2 Tbsp Olive oil For cooking the salmon.
  • 2 Tbsp Butter For cooking the salmon.

Method
 

Cooking
  1. Pat the salmon dry and season with salt and pepper.
  2. Heat olive oil and butter in a pan over medium-high heat.
  3. Cook the salmon in the hot pan until just barely done, then remove and let it rest.
  4. Cook the pasta according to package instructions, saving some pasta water before draining.
  5. In the same pan, sauté minced garlic until fragrant.
  6. Add cream and lemon zest/juice to the pan, stirring to combine.
  7. Toss the drained pasta into the sauce, adding reserved pasta water as needed for consistency.
  8. Flake the salmon into the pasta and toss gently.
  9. Finish with grated Parmesan and serve immediately.

Notes

Store leftovers in a sealed container and aim to eat within 2 days. Reheat gently on the stovetop with a splash of water or milk to maintain creaminess. For freezing, separate salmon from pasta and sauce if possible.
