Salmon and Asparagus Lemon Butter Foil Packets

Ingredients
  

Main Ingredients
  • 4 fillets Salmon fillets (skin on or off, both work)
  • 1 bunch Asparagus, trimmed
For the Lemon Butter Sauce
  • 2 tablespoons Butter, melted or softened Use real butter for best flavor.
  • 1 medium Lemon (slices plus a little juice) Add a squeeze of juice into the butter.
  • 2 cloves Garlic (minced or garlic powder) Use minced garlic for best flavor.
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Optional Ingredients
  • 1 tablespoon Parsley, chopped For garnish.
  • 1 teaspoon Dill, chopped For garnish.
  • 1 pinch Chili flakes For a bit of heat.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and tear off sheets of foil, one for each portion.
  2. Place a small handful of asparagus in the center of the foil. Sprinkle with salt and pepper, and add a dab of butter on top.
  3. Place the salmon on top of the asparagus. Spoon the garlic butter mixture over the salmon and add lemon slices on top.
  4. Fold the foil into a packet, making sure it is snug but has a little air space inside for steam.
  5. Place the foil packets on a baking sheet and bake for 12 to 16 minutes, depending on the thickness of the salmon.
  6. Check for doneness; the salmon should flake easily with a fork and be opaque in the thickest part.

Notes

Feel free to customize your foil packets with other vegetables like zucchini or bell peppers. If using potatoes or carrots, pre-cook them slightly to ensure they cook through.
