Rolled Steak Bites Stuffed with Cheese

Ingredients
  

Main Ingredients
  • 1-1.5 pounds flank steak Can also use skirt steak (more chewy) or thin cut top sirloin.
  • 8 ounces cheese (mozzarella sticks or provolone slices, or pepper jack for heat) Choose a sturdy cheese for best results.
  • 1-2 tablespoons olive oil For seasoning and preventing dryness.
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika Regular paprika can be used as an alternative.
  • to taste salt and pepper
  • optional chopped parsley or green onions For topping.
  • toothpicks Do not skip these, essential for securing rolls.

Method
 

Preparation
  1. Lay the flank steak flat and pat it dry. If it is thick, cover with plastic wrap and pound it until even.
  2. Season both sides with salt, pepper, garlic powder, and paprika. Drizzle with olive oil and rub it in.
  3. Cut the steak into strips 2-3 inches wide.
  4. Place cheese near one end of each strip, roll up snugly, and secure with a toothpick.
Cooking
  1. Heat a skillet over medium-high heat and sear the rolls on each side until browned, cooking the steak to your liking.
  2. If the strips are thick, finish cooking in the oven at 400°F for a few minutes.
  3. Let the rolls rest for a couple of minutes, then remove toothpicks if desired or leave them in for easy grabbing. Sprinkle herbs on top and serve warm.

Notes

Do not overfill the rolls to prevent cheese leak. Let them rest before slicing. Slice against the grain for tenderness.
