Preparation
- Lay the flank steak flat on a cutting board. If it is thick, cover with plastic wrap and lightly pound it until it is more even.
- Season the surface with salt, pepper, and any extras you like (garlic powder, paprika, a pinch of chili flakes).
- Spread cream cheese filling in an even layer, leaving a small border around the edges.
- Sprinkle shredded cheese over the cream cheese layer.
- Roll it up tightly like a jelly roll, keeping the roll snug.
- Wrap the roll tightly in plastic wrap and chill it for at least 20 minutes.
- Slice into pinwheels about 1 inch thick, securing with toothpicks if needed.
Cooking
- Cook in a hot skillet with a little oil for a few minutes per side, or bake on a sheet pan at 400°F until browned and the cheese is melted.
- Rest for a couple of minutes before serving warm.
Notes
Tips: Chill the rolled steak before slicing for cleaner cuts. Use a strong cheese for better flavor. Do not overstuff the rolls to prevent leaking.
